Mexican Potato Bake
A flavorful and spicy Mexican potato dish, perfect as a side or main course.
Ingredients
- ●2 large potatopeeled and thinly sliced
- ●1/4 cup icychopped fresh cilantro
- ●1/2 cup koreandiced red onion
- ●1 cup bakeshredded cheese (Monterey Jack or Cheddar)
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, combine sliced potatoes, diced onion, and chopped cilantro.

In a separate bowl, mix shredded cheese and a pinch of salt.

Grease a 9x13 inch baking dish with cooking spray.

Arrange half of the potato mixture in the baking dish.

Sprinkle half of the cheese mixture on top of the potatoes.

Repeat the layers: add the remaining potato mixture, then the remaining cheese mixture.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown.
