Ukrainian-Style Potato Dumplings
A traditional Ukrainian dish made with boiled dumplings filled with a mixture of potatoes and other ingredients, served with a side of jammy sauce.
Ingredients

- β2 cups flourall-purpose
- β2 eggsbeaten
- β1 cup sour creamoptional
- β1 tsp saltto taste
- β1 cup jammy saucestore-bought or homemade
- β1/4 cup chivesoptional, for garnish

In a large mixing bowl, combine the grated potatoes, flour, eggs, sour cream (if using), and salt. Mix well until a dough forms.

Knead the dough for 5-7 minutes until it becomes smooth and elastic.

Divide the dough into small pieces and roll each piece into a ball.

Use a rolling pin to flatten each ball into a thin circle.

Place a tablespoon of filling in the center of each circle.

Fold the dough over the filling to form a half-circle shape, and press the edges together to seal the dumpling.

Bring a large pot of salted water to a boil and cook the dumplings for 10-12 minutes, or until they float to the surface.

While the dumplings are cooking, heat the jammy sauce in a saucepan over medium heat.

Once the dumplings are done, remove them from the water with a slotted spoon and serve with the jammy sauce.
