Matcha Tiramisu
A Japanese-inspired take on the Italian classic, featuring green tea-infused ladyfingers and a creamy mascarpone cheese mixture.
Ingredients
- β1/2 cup red bean paste
- β1 package aerated pastryfor ladyfingers
- β8 oz mascarpone cheese
- β1 cup heavy cream
- β2 tsp matcha powder
- β1 cup sugar
- β2 tbsp unsalted butter
- β2 eggs
- β1 tsp vanilla extract

In a medium bowl, whisk together the mascarpone cheese, heavy cream, matcha powder, and sugar until stiff peaks form.

Dip each ladyfinger into the coffee for about 3-5 seconds on each side. They should be soft and pliable but not too wet.

In a large serving dish, create a layer of ladyfingers. You can trim them to fit the dish.

Spread half of the mascarpone mixture over the ladyfingers.

Repeat the layering process, starting with the ladyfingers, then the mascarpone mixture, and finally another layer of ladyfingers.

Cover with plastic wrap and refrigerate for at least 3 hours or overnight.

Just before serving, sift some matcha powder over the top of the tiramisu.

Cut into slices and serve chilled.
