Argentinian Beef Stew
A hearty Argentinian-inspired beef stew with tender beef and rich flavors.
Ingredients
- β1.5 lbs beef stew meat
- β1 large onionchopped
- β3 cloves garlicminced
- β1 cup red wine
- β2 cups beef broth
- β2 tbsp tomato paste
- β1 tsp dried oregano
- β1 tsp salt
- β1/2 tsp black pepper

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef on all sides, about 5 minutes. Remove from pot and set aside.

Add the chopped onion to the pot and cook until browned, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the red wine, beef broth, tomato paste, dried oregano, salt, and black pepper to the pot.

Stir to combine and bring to a boil.

Return the browned beef to the pot and cover with a lid.

Transfer the pot to the oven and cook at 300Β°F (150Β°C) for 2 1/2 hours, or until the beef is tender.

Serve hot, garnished with fresh parsley if desired.
