Vegan One Pot Stone Bowl
A hearty and comforting vegan dish made in one pot and served in a bowl over a bed of stone-ground rice.

Ingredients
- β1 cup Indulgent mushroomssuch as shiitake or cremini
- β1 can Canadian black beansdrained and rinsed
- β1 medium One onionchopped
- β1 cup Stone-ground riceuncooked
- β4 cups Bowl of brothvegan broth, such as vegetable or mushroom

Instructions

Heat 2 tablespoons of oil in a large pot over medium-high heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the black beans, rice, and broth to the pot.
