Classic Dutch Lentil Casserole
A hearty and comforting casserole made with lentils, onions, and a blend of spices. Perfect for a weeknight dinner.
Ingredients
- ●1 cup, dried Lentils
- ●1 medium, chopped Onion
- ●2 medium, peeled and chopped Carrots
- ●2 stalks, chopped Celery
- ●1 can, 14.5 oz Canned diced tomatoes
- ●4 cups Vegetable broth
- ●2 tbsp Brown sugar
- ●1 tsp Dried thyme
- ●to taste Salt and pepper

Preheat the oven to 375°F (190°C).

In a large pot, sauté the onion, carrots, and celery in a little water until the vegetables are tender.

Add the lentils, diced tomatoes, vegetable broth, brown sugar, and thyme to the pot.

Bring the mixture to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.

Transfer the mixture to a 9x13 inch baking dish.

Season with salt and pepper to taste.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the top is lightly browned.
