Eggplant Parmesan Crumble
A fusion of Italian and Egyptian flavors, this eggplant parmesan crumble is a twist on the classic dish with a crunchy topping.
Ingredients
- β2 medium eggplantsliced into 1/2-inch thick rounds
- β1 cup crumblestore-bought or homemade
- β1 cup ricotta cheeselow-fat or whole
- β1/2 cup parmesan cheesegrated
- β1 cup tomato saucehomemade or store-bought
- β2 tablespoons olive oilfor brushing eggplant slices
- βto taste saltfor eggplant
- β1/4 cup basilchopped, for garnish

Preheat the oven to 400Β°F (200Β°C).

Brush the eggplant slices with olive oil and season with salt.

Bake the eggplant slices in the preheated oven for 20-25 minutes, or until tender and lightly browned.

In a bowl, combine the ricotta cheese and parmesan cheese.

Spoon a layer of tomato sauce into the bottom of a baking dish.

Arrange a layer of eggplant slices on top of the sauce.

Sprinkle half of the crumble mixture over the ricotta.

Repeat the layers, starting with the eggplant, then the sauce, then the ricotta, and finally the crumble.
