Thai Apricot Chicken Bake
Sweet and savory, this Thai-inspired bake combines the flavors of apricot and chicken for a delicious and easy meal.
Ingredients
- β1 pound boneless, skinless chicken breastcut into 1-inch pieces
- β1/2 cup dried apricotchopped
- β2 teaspoons jamaican jerk seasoning
- β1 cup fluffy baking mix
- β2 tablespoons olive oil
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β1 tablespoon indulgent brown sugar

In a small bowl, mix together jerk seasoning, salt, and black pepper.
