Greek Chorizo Lasagna
A twist on the classic lasagna, featuring the bold flavors of Greek chorizo and the richness of greek yogurt.
Ingredients
- β8 ounces Chorizo
- β1 cup Greek yogurt
- β8-10 sheets Lasagna noodles
- β8 ounces Feta cheese
- β8 ounces Parmesan cheese
- β1/4 cup, chopped Fresh parsley
- β3 cloves, minced Garlic
- β2 tablespoons Olive oil

Preheat oven to 375Β°F (190Β°C).

Cook the lasagna noodles according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium-high heat. Add the chorizo and cook until browned, breaking it up with a spoon as it cooks.

In a medium bowl, combine the Greek yogurt and feta cheese. Stir until smooth.

In a large bowl, combine the cooked lasagna noodles, chorizo mixture, and yogurt-feta mixture. Mix well to combine.

In a greased 9x13-inch baking dish, create a thin layer of the chorizo mixture. Top with a layer of lasagna noodles, followed by a layer of the yogurt-feta mixture.

Repeat the layers two more times, ending with a layer of noodles on top.

Sprinkle the parmesan cheese over the top layer of noodles.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the top is golden brown and the cheese is melted and bubbly.

Remove from the oven and sprinkle with chopped parsley. Let rest for 10-15 minutes before serving.
