Torta Caprese
A classic Italian dessert originating from the island of Capri, made with sponge cake, fresh mozzarella and juicy tomatoes.
Ingredients
- β1 package tortasponge cake
- β2 large tomatofresh tomatoes
- β8 ounces mozzarellafresh mozzarella
- β2 cups sugargranulated sugar
- β2 eggslarge eggs
- β2 cups flourall-purpose flour
- β1 teaspoon vanilla extractpure vanilla extract

Preheat the oven to 350Β°F (175Β°C).

Cut the torta into 1-inch thick slices.

In a large bowl, whisk together the eggs, sugar, and vanilla extract.

Add the flour to the bowl and mix until just combined.

Dip each torta slice into the egg mixture, coating both sides evenly.

Place the coated torta slices on a baking sheet lined with parchment paper.

Bake the torta slices in the preheated oven for 15-20 minutes, or until golden brown.

While the torta is baking, slice the tomatoes into 1/4-inch thick rounds.

Remove the torta slices from the oven and let them cool on a wire rack.

To assemble the Caprese, place a slice of torta on a serving plate, followed by a slice of mozzarella and a tomato round.
