Bao Baked Potatoes with Jamaican Twist
A flavorful twist on classic baked potatoes, filling them with a spicy Jamaican filling and topping with crispy bao croutons.
Ingredients
- β4 large potatoeslook for high-starch potatoes
- β2 tbsp Jamaican jerk seasoninguse store-bought or homemade
- β6 slices baconcrumbled
- β1 bunch scallionschopped
- β1 package crunchy baocut into small cubes
- β1 cup cheddar cheeseshredded
- β2 tbsp unsalted buttermelted
- β1 cup sour creamchilled
- β1 tsp cayenne pepperoptional
- βto taste salt

Preheat oven to 400Β°F (200Β°C).

Scrub and poke potatoes with a fork to allow steam to escape.

Rub potatoes with oil and sprinkle with jerk seasoning. Bake for 45 minutes.

Meanwhile, cook bacon until crispy. Chop into small pieces.

In a small bowl, mix together sour cream, scallions, cayenne pepper (if using), and salt.

Remove potatoes from oven and top each with a spoonful of the sour cream mixture, crumbled bacon, and shredded cheese.

Return potatoes to oven and bake for an additional 5-7 minutes, until cheese is melted and bubbly.

Meanwhile, toss bao cubes with a little oil and bake in the oven until crispy.

Remove potatoes from oven and top each with crispy bao croutons and a pat of melted butter.
