Russet Potato Hash with Indulgent Twist
A crispy, golden potato hash with a rich and indulgent addition. Perfect for a hearty breakfast or brunch.
Ingredients
- β2 large Russet Potatoes
- β1/4 cup Indulgentcrumbled bacon or pancetta
- β1/4 cup Hashoptional
- β2 tbsp Olive Oil
- β Salt
- β Pepper
- β Fresh Parsleychopped (optional)

1. Preheat oven to 400Β°F (200Β°C).

2. Peel the Russet potatoes and cut them into 1/2-inch cubes.

3. In a large bowl, toss the potatoes with olive oil, salt, and pepper until they are evenly coated.

4. Spread the potatoes out in a single layer on a baking sheet.

5. Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.

6. While the potatoes are roasting, heat a skillet over medium heat.

7. Add the crumbled bacon or pancetta to the skillet and cook until crispy.

8. Remove the skillet from the heat and stir in the chopped parsley (if using).

9. Once the potatoes are done roasting, remove them from the oven and let them cool for a few minutes.
