Norwegian Seafood Pasta
A delicious and flavorful pasta dish featuring Norwegian seafood and penne rigate.
Ingredients
- β8 oz Penne Rigate
- β1 Norwegian Cod FilletsFresh and sustainable
- β1 cup peeled and deveined Shrimp
- β2 tbsp Butter
- β2 cloves minced Garlic
- β1 tsp dried Dill
- βto taste Salt
- βto taste Pepper
- β2 tbsp Lemon Juice
- β1/4 cup White Wine

Bring a large pot of salted water to a boil. Cook the penne rigate according to package instructions until al dente.

In a large skillet, melt 1 tablespoon of butter over medium heat. Add the garlic and cook for 1 minute.

Add the cod fillets to the skillet and cook for 2-3 minutes per side, or until cooked through.

Remove the cod from the skillet and set aside.

Add the remaining 1 tablespoon of butter to the skillet. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through.

Add the dill, salt, and pepper to the skillet and stir to combine.

Add the cooked penne rigate to the skillet and toss with the shrimp and sauce.

Squeeze the lemon juice over the top of the pasta and toss to combine.

Add the cooked cod back to the skillet and toss with the pasta and sauce.

Serve the Norwegian seafood pasta hot, garnished with additional dill if desired.

In a small saucepan, combine the white wine and 1 cup of the pasta water. Bring to a simmer and cook until the sauce has reduced slightly, stirring occasionally.

Toss the cooked pasta with the white wine sauce and serve immediately.
