Greek Stifado with Lamb
A hearty and flavorful Greek stew made with tender lamb and a rich onion sauce.
Ingredients
- β1 1/2 pounds Lamb shoulder, cut into 2-inch pieces
- β2 large Onionsthinly sliced
- β4 cloves Garlicminced
- β2 tablespoons Greek stifado spice mix
- β1 cup Red wine
- β2 tablespoons Tomato paste
- β2 cups Beef broth
- β2 tablespoons Brown sugar
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Brown the lamb pieces in batches on all sides, about 5 minutes per batch. Transfer the lamb to a plate and set aside.

Reduce heat to medium and cook the onions until they are softened and lightly browned, about 8 minutes.

Add the garlic and cook for 1 minute, until fragrant.

Add the stifado spice mix and cook for 1 minute.

Add the red wine and bring to a simmer, scraping up any browned bits from the bottom of the pan.

Add the tomato paste and cook for 1 minute.

Add the beef broth, brown sugar, salt, and pepper. Stir to combine.

Return the lamb to the pot and bring to a simmer.

Cover the pot and transfer it to the oven.

Braise the lamb for 2 1/2 hours, or until it is tender and falls apart easily.

Serve the stew hot, garnished with fresh parsley if desired.
