Irish Lamb Stew with Italian Twist
A hearty stew infused with smoky flavors and indulgent ingredients, served with a hint of Italian cuisine.
Ingredients
- β1 pound Lamb Shouldercut into 1-inch cubes
- β6 slices Smoked Bacondiced
- β1 cup Indulgent Mushroomssliced
- β1 cup Irish Guinness Beerused for braising
- β1 medium Red Onionsliced
- β3 cloves Garlicminced
- β2 tablespoons Tomato Pasteused for depth of flavor
- β1 teaspoon Italian Herbsdried, mixed herbs

Heat 2 tablespoons of oil in a large Dutch oven over medium heat.

Brown the lamb cubes in batches until browned on all sides.

Remove the lamb from the pot and set aside.

Add the diced bacon to the pot and cook until crispy.

Remove the bacon from the pot and set aside.

Add the sliced mushrooms to the pot and cook until they release their moisture.

Add the sliced red onion and minced garlic to the pot and cook until the onion is translucent.

Add the browned lamb back to the pot, along with the Guinness beer, tomato paste, and dried Italian herbs.

Bring the stew to a boil, then cover the pot and transfer it to the oven.

Braise the stew in a preheated oven at 300Β°F (150Β°C) for 2 1/2 hours, or until the lamb is tender.

Remove the pot from the oven and stir in the crispy bacon.
