Classic British Lentil Pie
A traditional British-inspired dish made with red lentils and a flaky pie crust, perfect for a cozy evening meal.
Ingredients

- ●1 medium Onion
- ●2 medium Carrots
- ●2 stalks Celery
- ●1 cup Mushrooms
- ●2 tbsp All-purpose flour
- ●2 cups Vegetable broth
- ●1 cup Mash
- ●2 tbsp Butter
- ●1 sheet Pie crust

Preheat oven to 375°F (190°C).

In a large pan, sauté the onion, carrots, and celery in butter until softened.

Add the mushrooms and cook until they release their moisture and start to brown.

Stir in the flour to create a roux, then gradually add the vegetable broth, whisking continuously.

Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.

Add the red lentils and cook for a further 10-15 minutes, or until they are tender.

Season the filling with salt and pepper to taste.

Roll out the pie crust and place it in a 9-inch pie dish.

Fill the pie crust with the lentil filling and top with a sheet of mash.

Bake the pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is hot and bubbly.
