Ethiopian Lentil Stew
A flavorful and nutritious stew originating from Ethiopia, made with red lentils and a blend of spices.
Ingredients
- β1 cup Red lentilsRinsed and drained
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 inches GingerGrated
- β2 tablespoons Tomato pasteDried
- β2 teaspoons Berbere spiceEthiopian chili powder
- β2 tablespoons Olive oilFor sautΓ©ing
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger and cook for an additional minute.

Add the tomato paste and cook for 1-2 minutes, stirring constantly.

Add the berbere spice and cook for 1 minute, stirring constantly.

Add the lentils and 4 cups of water to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the lentils are tender.
