Scottish Cod and Chips
A traditional Scottish dish consisting of battered and fried cod served with crispy chips (fries).
Ingredients
- ●4 pieces cod filletsfresh and sustainable
- ●1 cup all-purpose flour
- ●1 cup milk
- ●2 eggsbeaten
- ●1/2 cup butter, melted
- ●1 bag chips (fries)frozen, thawed
- ●1/2 cup oil for frying
Instructions

Heat the oil in a deep frying pan to 350°F (175°C).

In a shallow dish, mix together the flour and a pinch of salt.

In a separate dish, beat the eggs.

Dip each cod fillet first in the flour mixture, then in the beaten eggs.

Place the coated cod in the hot oil and fry for 3-4 minutes or until golden brown.

Remove the cod from the oil and place on a paper towel-lined plate to drain excess oil.

Increase the oil temperature to 375°F (190°C).

Fry the chips in batches until golden brown and crispy.

Drain the chips on paper towels.

Serve the cod with chips and a dollop of melted butter.

Garnish with chopped fresh parsley if desired.
