Algerian Oat Hash
A hearty North African-inspired breakfast dish featuring a crispy oat and vegetable hash, topped with a fried egg.
Ingredients
- β1 cup oatsrolled oats
- β1/2 cup hashdiced
- β1/2 teaspoon intenseground cumin
- β1/2 teaspoon algerianground coriander
- β4 eggs
- β1 medium onion
- β2 cloves garlic
- β2 tablespoons olive oil
- β1/4 teaspoon salt
- β1/4 teaspoon pepper

In a large pan, heat the olive oil over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the hash and cook for 2-3 minutes, stirring occasionally.

Add the oats, cumin, coriander, salt, and pepper. Cook, stirring frequently, for 5 minutes.

Using a spatula, press the mixture down to form a flat layer.

Cook for an additional 2-3 minutes, or until the oats are lightly browned.

Crack an egg into a small bowl and season with salt and pepper.
