Tom Kha Chicken Soup
A flavorful Thai-inspired soup made with chicken, coconut milk, and spices. This comforting dish is perfect for a chilly day.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 tablespoons tom kha pastefound in most Asian grocery stores
- β1 can coconut milkfull-fat can
- β4 cups chicken brothlow-sodium broth
- β2 tablespoons fish sauceoptional, for added depth
- β1 tablespoon sugarbalances out acidity
- β2 tablespoons lemon juicefreshly squeezed
- β1/4 cup chopped cilantrofor garnish
- β1/4 cup chopped scallionsfor garnish
- β2-3 intense chiliesdepending on desired heat level

Heat 2 tablespoons of oil in a large pot over medium heat.
