Tamarind Chicken Curry
A flavorful and spicy Indian-inspired curry made with tamarind paste, chicken, and a blend of spices.
Ingredients
- β1 pound chicken breastcut into 1-inch pieces
- β2 tablespoons tamarind pasteadjust to taste
- β1 teaspoon curry powderadjust to taste
- β2 tablespoons ghee or vegetable oil
- β1 medium onionchopped
- β1-inch piece gingergrated
- β2 cloves garlicminced
- β1 cup chicken broth
- βto taste salt
- βto taste black pepper

Heat 1 tablespoon of ghee or oil in a pan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the grated ginger and minced garlic and cook for another minute.

Add the chicken pieces and cook until browned, about 5-6 minutes.

Add the tamarind paste, curry powder, chicken broth, salt, and black pepper.

Stir well and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until the chicken is cooked through.

Serve hot, garnished with fresh cilantro if desired.
