Beef Stew with Mediterranean Twist
A hearty beef stew infused with the rich flavors of the Mediterranean, featuring intense, peppery notes.
Ingredients
- β1 pound Beef (stew meat)cut into 1-inch cubes
- β1/4 cup Mediterranean olivespitted
- β1/2 cup Artichoke heartsdrained and chopped
- β3 cloves Garlicminced
- β1 teaspoon Intense, peppery red pepper flakes
- β1 teaspoon Dried oregano
- β2 tablespoons Tomato paste
- β1 cup Red winedry

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned on all sides, about 5 minutes.

Remove beef from pot and set aside.

Add garlic, red pepper flakes, and oregano to pot and cook for 1 minute.

Add tomato paste and cook for 1 minute.

Add red wine, scraping up browned bits from pot.

Return beef to pot and bring to a boil.

Reduce heat to low and simmer, covered, for 2 1/2 hours.
