Ethiopian Minari Stew
A hearty and flavorful stew combining the intense flavors of Ethiopia with the sweet taste of Minari. Perfect for a cold winter night.
Ingredients
- β2 cups, chopped Minari
- β2 tsp Ethiopian Berbere spice blend
- β1, chopped Onion
- β3 cloves, minced Garlic
- β1 cup, peeled and chopped Carrots
- β2, peeled and chopped Potatoes
- β2 tbsp Tomato paste
- β4 cups Vegetable broth
- β2 tbsp Olive oil
- βto taste Salt

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the chopped carrots and potatoes and cook for 5 minutes.

Add the Minari, Berbere spice blend, tomato paste, and vegetable broth. Stir well.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.

Season with salt to taste.
