- β2 tbsp Redcurrant Jam
- β2 tbsp Olive Oil
- β1 medium Onion
- β2 cloves Garlic
- β1 medium Diced Eggplant
- β1 can Chickpeas
- β1 medium Red Bell Pepperseeded and chopped
- β1 tsp Cumin
- β1 tsp Coriander

Heat the olive oil in a large pan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the eggplant and cook until tender, about 5 minutes.

Add the chickpeas, red bell pepper, cumin, and coriander. Cook for 2 minutes.
