Smoky Peruvian Oat Bowl

- β2 medium Peruvian-Style Roasted Sweet PotatoesRoasted with a drizzle of olive oil and a pinch of salt

Roast the sweet potatoes for 20-25 minutes, or until tender.

In a medium saucepan, bring 2 cups of water to a boil. Add the oats and reduce heat to a simmer.

Cook the oats for 5-7 minutes, or until they have absorbed most of the water and have a creamy consistency.

In a small pan, heat a drizzle of olive oil over medium heat. Add the smoked paprika, chili flakes, and cumin. Cook for 1-2 minutes, stirring constantly.
