Sweet French Tagine
A rich and flavorful vegan tagine dish made with sweet ingredients. Enjoy as a hearty dessert.
Ingredients
- β2 large, peeled and cubed Sweet potatoesChoose sweet and firm potatoes
- β1 cup, broken into small pieces Intense chocolateHigh-quality dark chocolate
- β1 cup, pitted and chopped French datesMedjool or similar variety
- β2 tsp Tagine spice blendAvailable at Middle Eastern or North African markets
- β2 tbsp Coconut sugarOr substitute with date syrup for a more intense flavor
- β1/4 cup Coconut oilFor greasing the baking dish
- β1/2 cup Almond milkOptional for a creamier texture

Preheat oven to 375Β°F (190Β°C).

Grease an 8x8 inch baking dish with coconut oil.

In a blender, combine sweet potatoes, chocolate, dates, and tagine spice blend.

Blend until smooth and creamy, stopping to scrape down the sides as needed.

Pour the mixture into the prepared baking dish and smooth the top.

If using almond milk, drizzle it over the top of the mixture.

Bake for 35-40 minutes, or until the edges are set and the center is slightly gooey.
