Algerian Pork Tenderloin Tagine
A flavorful and aromatic North African-inspired dish made with tenderloin, spices, and dried fruits. Serve with couscous or rice.
Ingredients

- ●2 tablespoons Algerian Spice Blend
- ●2 tablespoons Coconut Oil
- ●1 medium Onion
- ●1 cup Dried Apricots
- ●1 cup Pitted Dates
- ●1 tablespoon Ginger
- ●2 cloves Garlic
- ●to taste Salt
- ●to taste Black Pepper
Instructions

Preheat oven to 400°F (200°C).

Season the pork tenderloin with Algerian Spice Blend, salt, and black pepper.

Heat coconut oil in a large Dutch oven over medium-high heat.

Sear the pork tenderloin until browned on all sides, about 2-3 minutes per side.

Transfer the pork to a plate and set aside.

Add onion to the pot and cook until softened, about 5 minutes.

Add ginger and garlic and cook for an additional minute.

Add dried apricots and pitted dates to the pot and cook for 2-3 minutes.

Return the pork tenderloin to the pot and cover with a lid.

Transfer the pot to the preheated oven and cook for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
