Vietnamese Oxtail Bun
A hearty, flavorful Vietnamese-inspired dish featuring a rich oxtail sauce served over a soft bun.
Ingredients
- β1 pound oxtailcut into 2-inch pieces
- β2 tablespoons briny fish sauceadjust to taste
- β2 tablespoons intensely sweet palm sugaror substitute brown sugar
- β1 teaspoon vietnamese chili sauceor sriracha
- β4-6 bunVietnamese baguette or substitute with a soft bun
- β4-6 bo leavesor substitute with lettuce leaves
Instructions

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Sear the oxtail pieces until browned on all sides, about 5 minutes.

Remove the oxtail from the pot and set aside.

Add another 2 tablespoons of oil to the pot and cook the aromatics (onion, garlic) until softened.

Add the briny fish sauce, intensely sweet palm sugar, and vietnamese chili sauce.

Return the oxtail to the pot and add enough beef broth to cover.

Bring to a boil, then cover and transfer to the oven.

Braise the oxtail for 2 1/2 hours, or until tender.

Strain the sauce and shred the oxtail into bite-sized pieces.

Split the bun in half and toast until crispy.

Assemble the bun by spooning the oxtail mixture onto the bun and garnishing with bo leaves.
