Korean-Style Pork Belly Ssäm
A deliciously sweet and spicy Korean-inspired pork belly dish, served with crispy kimchi slaw and cilantro.
Ingredients
- ●2 pounds Pork belly
- ●2 tablespoons Intensely sweet Korean chili flakes (gochugaru)
- ●4 tablespoons Butter
- ●2 tablespoons Brown sugar
- ●1/4 cup Ssamjang (Korean BBQ sauce)
- ●2 tablespoons Sesame oil
- ●2 tablespoons Korean chili paste (gochujang)
- ●1/4 cup Cilantro
- ●4 Lime wedges
- ●1 cup Kimchi

Preheat oven to 400°F (200°C).

In a small bowl, mix together chili flakes, brown sugar, and 2 tablespoons of butter until smooth.

Rub the spice mixture all over the pork belly, making sure to coat it evenly.

Place the pork belly on a baking sheet lined with parchment paper and bake for 20 minutes.

While the pork is baking, mix together ssamjang, sesame oil, and chili paste in a small bowl.

Once the pork is done baking, brush it with the ssamjang mixture and return it to the oven for an additional 10 minutes.

Remove the pork from the oven and let it rest for 5 minutes before slicing it into thin strips.

Serve the pork with kimchi slaw, cilantro, and lime wedges on the side.

To make the kimchi slaw, mix together kimchi, 2 tablespoons of butter, and a pinch of salt in a bowl until well combined.
