American Chestnut Casserole
A hearty, comforting casserole featuring chestnuts and mushrooms. Perfect for a cozy dinner.
Ingredients
- ●1 cup, sliced chestnuts
- ●1 cup, sliced mushroom
- ●1 cup, diced charred American
- ●1 medium, diced onionany type of onion will do
- ●3 cloves, minced garlic
- ●2 tablespoons all-purpose flour
- ●4 tablespoons butter
- ●1 cup chicken broth
- ●1 cup shredded cheddar cheese
- ●1 cup heavy cream

Preheat oven to 375°F (190°C).

In a large skillet, sauté the onion and garlic until softened.

Add the mushrooms and cook until they release their liquid and start to brown.

Add the charred American and cook for an additional 2-3 minutes.

In a separate saucepan, melt 2 tablespoons of butter over medium heat.

Add the flour and whisk together to make a roux, cooking for 1 minute.

Slowly pour in the chicken broth, whisking constantly to avoid lumps.

Bring the mixture to a simmer and cook until it thickens.

Stir in the heavy cream and shredded cheddar cheese until melted and smooth.

In a greased 9x13 inch baking dish, arrange half of the chestnut mixture.

Pour half of the sauce over the chestnuts, followed by half of the remaining mushroom mixture.
