Spanish Chicken Croquetas
Crispy fried balls filled with shredded chicken in a creamy Spanish-inspired sauce. Perfect as a snack or appetizer.
Ingredients
- β1 pound chicken breastcooked and shredded
- β1/2 cup intensely creamy saucestore-bought or homemade
- β1/4 cup all-purpose flour
- β2 eggs
- β1 packet spanish croquetas mix
- β1/2 cup vegetable oil
- βto taste salt
- βto taste black pepper
- β1/4 cup bread crumbs

In a large mixing bowl, combine the shredded chicken, intensely creamy sauce, and Spanish croquetas mix.

In a separate bowl, beat the eggs.

Add the flour and mix until a dough forms.

Add the bread crumbs and mix until combined.

Using your hands, shape the dough into small balls, about 1 1/2 inches in diameter.

Dip each ball into the beaten eggs, then roll in the flour mixture to coat.

Heat the vegetable oil in a deep frying pan over medium-high heat.

When the oil is hot, add a few of the coated balls to the pan and fry until golden brown, about 2-3 minutes.

Remove the croquetas from the oil and place on a paper towel-lined plate to drain excess oil.
