Italian-Style Pinakbet Beans
A fusion of Italian and Filipino flavors, this dish brings together the sweetness of pinakbet with the creaminess of Italian ingredients.
Ingredients
- β1 cup haricot beans
- β6 slices intensely fatty pancettadiced
- β1 cup filipino pinakbetsee notes for pinakbet ingredients
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato pasteoptional
- β1/4 cup white wineoptional
- β2 tablespoons olive oil
- βto taste salt
- βto taste black pepper

Heat olive oil in a large skillet over medium heat.

Add diced pancetta and cook until crispy. Remove from skillet and set aside.

Add chopped onion and cook until translucent. Add minced garlic and cook for 1 minute.

Add tomato paste (if using) and cook for 1 minute, stirring constantly.

Add white wine (if using) and cook until liquid is almost completely reduced.

Add haricot beans, pinakbet, salt, and black pepper. Stir to combine.

Return cooked pancetta to skillet and stir to combine.

Reduce heat to low and simmer for 10-15 minutes, or until flavors have melded together.

Note: To make pinakbet, combine haricot beans, Filipino vegetables (such as eggplant, okra, and tomatoes), and spices in a pan, and cook over low heat for 10-15 minutes, stirring occasionally.
