Irish Lamb Stew
A hearty and comforting Irish-inspired lamb stew made with tender chunks of lamb, flavorful vegetables, and a rich broth.
Ingredients
- β1 pound Lamb shouldercut into 1-inch cubes
- β1 medium Onionchopped
- β2 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β3 cloves Garlicminced
- β2 tablespoons All-purpose flourfor thickening
- β2 cups Beef brothhomemade or store-bought
- β1 cup Red wineoptional
- β2 sprigs Fresh thymefresh or dried
- β Salt and pepper

Season the lamb with salt and pepper.

Heat a large Dutch oven over medium-high heat.

Add the lamb to the pot and cook until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set it aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and potatoes to the pot and cook for 5 minutes.

Add the beef broth, red wine (if using), and browned lamb back to the pot.

Stir in the flour to thicken the stew.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.
