Gooey Ramen with Sweet Rhubarb
A twist on traditional ramen with sweet rhubarb and gooey sauce. This Japanese-inspired dish is perfect for a cozy night in.
Ingredients
- β1 pound, sliced Rhubarb
- β1 package Ramen Noodles
- β2 tablespoons Shoyu
- β4 cups Pork or Chicken Broth
- β1 tablespoon Soy Sauce
- β2 tablespoons Sugar
- β1/4 cup, sliced Green Onions
- β1 tablespoon Sesame Seeds
- β2 tablespoons Gochujang

Cook the ramen noodles according to package instructions.

In a separate pot, combine the broth, soy sauce, sugar, and shoyu. Bring to a boil and then reduce heat to a simmer.

Add the sliced rhubarb to the pot and cook for 5-7 minutes, or until tender.

In a small saucepan, combine the gochujang and 1 tablespoon of water. Cook over low heat, stirring constantly, until the sauce is gooey and syrupy.

To assemble the dish, place cooked noodles in a bowl, then add slices of rhubarb and a spoonful of the gooey sauce.
