Mexican Lamb Kachori
A Mexican twist on the Indian classic kachori, filled with tender lamb and spices.
Ingredients
- β1 pound, ground Lamb
- β1/2 cup, crumbled Intensely Spiced Chorizo
- β2 teaspoons Indian Curry Powder
- β2, diced Mexican Jammy Habanero Peppers
- β2 cups Kachori Pastry Dough
- β1/4 cup Vegetable Oil
- βto taste Salt
- βchopped (optional) Fresh Cilantro

1. Preheat oil in a deep frying pan to 375Β°F (190Β°C).

2. In a mixing bowl, combine lamb, chorizo, curry powder, habanero peppers, salt, and mix well.

3. Divide the kachori dough into 8 equal pieces. Roll each piece into a ball and then flatten it slightly into a disk.

4. Place a tablespoon of the lamb mixture in the center of each dough disk. Fold the dough over the filling and press the edges to seal the kachori.

5. Fry the kachori in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

6. Serve hot with a sprinkle of cilantro, if desired.
