Shrimp and Jammy Egg Mi
A popular Vietnamese dish featuring shrimp, jammy eggs, and mi noodles. Perfect for a quick and delicious lunch.
Ingredients
- β200g Mi noodles
- β12 large Shrimppeeled and deveined
- β4 Jammy eggshard-boiled and sliced
- β2 tbsp Vietnamese chili sauce
- β1 tbsp Soy sauce
- β1 tsp Fish sauce
- β2 tbsp Lime juice
- βto taste Chopped cilantro
- βto taste Salt
Instructions

Cook mi noodles according to package instructions. Drain and set aside.

Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.

Add the shrimp and cook until pink and fully cooked. Remove from the wok and set aside.

In the same wok, add the remaining 1 tablespoon of oil and pour in the Vietnamese chili sauce. Stir to combine.

Add the cooked noodles to the wok and stir to combine with the chili sauce.

Add the cooked shrimp back into the wok and stir to combine with the noodles and chili sauce.

Stir in the soy sauce, fish sauce, and lime juice.

Add the sliced jammy eggs to the wok and stir to combine.

Season with salt to taste.

Transfer the noodles and shrimp to a serving plate and garnish with chopped cilantro.
