Vietnamese Noodle Dish
A flavorful and spicy Vietnamese noodle dish made with a variety of fresh herbs and vegetables.

- β250g Rice NoodlesFresh or dried
- β2 Vietnamese ChiliesSliced
- β1/4 cup Intensely Mustardy SauceHomemade or store-bought
- β1/4 cup Fresh CilantroChopped
- β1/4 cup Fresh MintChopped
- β1 medium CarrotsJulienne-cut
- β1 medium Bell PeppersJulienne-cut
- β1 cup Bean SproutsFresh
- βto taste Salt
- βto taste Sugar
Instructions

Cook the rice noodles according to package instructions.

In a large skillet, heat 1 tablespoon of oil over medium-high heat.

Add the sliced chilies and cook for 1-2 minutes, until fragrant.

Add the carrots and bell peppers and cook for 3-4 minutes, until tender.

Add the bean sprouts and cook for an additional 1-2 minutes.

In a small bowl, whisk together the mustardy sauce, salt, and sugar.
