Spicy Chicken Biryani
A delicious Indian-inspired dish, made with marinated chicken and flavorful spices. This easy-to-make biryani is perfect for a weeknight dinner.
Ingredients
- β1 pound chicken breastboneless and skinless
- β2 cups basmati riceuncooked
- β1 medium onionchopped
- β2 inches gingergrated
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1/2 teaspoon turmericground
- β1/2 teaspoon red chili powderground
- β1/2 teaspoon saltto taste
- β2 tablespoons coconut oilfor cooking

Heat oil in a large skillet over medium-high heat.

Add the chopped onion and cook until browned, about 5 minutes.

Add the grated ginger and cook for an additional 1 minute.

Add the cumin, coriander, turmeric, red chili powder, and salt. Cook for 1 minute.

Add the chicken and cook until browned, about 5-6 minutes.

Add the basmati rice and stir to combine with the spices.

Add 2 cups of water to the skillet and bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
