Turkish Kofte Kebabs
A traditional Turkish recipe featuring flavorful kofte meatballs served with a side of fresh vegetables, all grilled to perfection.
Ingredients
- β1 pound Ground lamb
- β1 medium OnionFinely chopped
- β3 cloves GarlicMinced
- β1 teaspoon Turkish red pepper flakes
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper
- β2 tablespoons Intensely nutty extra-virgin olive oil
- β1/4 cup Fresh parsleyChopped
- β1 tablespoon Fish sauce (optional)For added depth of flavor

1. Preheat grill to medium-high heat.

2. In a large mixing bowl, combine the ground lamb, onion, garlic, Turkish red pepper flakes, salt, and black pepper. Mix well with your hands or a wooden spoon until just combined.

3. Using your hands, shape the mixture into small meatballs, about 1 1/2 inches in diameter. You should end up with around 20-25 kofte.

4. Thread the kofte onto skewers, leaving a little space between each one.

5. Brush the kofte with the intensely nutty olive oil and season with salt and black pepper.

6. Grill the kofte for 8-10 minutes, turning occasionally, until they are cooked through and nicely charred.

7. While the kofte are cooking, grill the fresh parsley until slightly charred.

8. Serve the kofte hot, garnished with the grilled parsley and a squeeze of lemon juice. If using fish sauce, serve on the side for added flavor.
