Algerian Tagine Stew
A hearty and flavorful North African stew made with rich spices and cashew nuts.
Ingredients
- β2 tsp Rich Tagine Spice Blendavailable at most Middle Eastern markets
- β1 cup Cashew Nutschopped
- β2 medium Intensely Sweet Carrots
- β4 cups Rich Chicken Broth
- β1 cup Algerian Apricots
- β1/4 cup Algerian Olives
- β2 tbsp Rich Olive Oil
- β1 large Rich Onionchopped
- β1 tsp Cumin Seeds
- β1 tsp Coriander Seeds

In a large Dutch oven, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the cumin seeds and coriander seeds and cook for 1 minute.

Add the chopped carrots and cook for 5 minutes.

Add the cashew nuts, chicken broth, apricots, olives, and tagine spice blend. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Season the stew with salt and pepper to taste.

Serve the tagine hot, garnished with chopped fresh parsley, if desired.
