Rich Dutch Stew
A hearty and flavorful Dutch stew made with tender chicken and rich vegetables.
Ingredients
- β1 1/2 pounds chicken breast or thighscut into 1-inch pieces
- β4 medium carrotssliced
- β3 large potatoespeeled and cubed
- β1 large onionchopped
- β2 stalks celerychopped
- β2 tablespoons all-purpose flourfor thickening
- β2 cups beef brothhomemade or store-bought
- β1 cup red wineoptional
- β1 teaspoon dutch seasoningor to taste
- βto taste salt and pepper
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Remove the chicken from the pot and set aside.

Add more oil if necessary, then sautΓ© the onion, carrots, and celery until the vegetables are tender, about 10 minutes.

Add the potatoes, flour, beef broth, wine (if using), and Dutch seasoning to the pot.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Return the chicken to the pot and continue to simmer, covered, until the chicken is cooked through and the stew is hot and bubbly, about 10-15 minutes.
