Rich Jamaican Sweet Potato Gratin
A rich and flavorful twist on the classic sweet potato gratin, infused with the warmth of Jamaican spices.
Ingredients
- β2 large sweet potatoes
- β2 tablespoons unsalted butter
- β1/2 cup intensely rich all-purpose flour
- β1 cup grated cheddar cheese
- β1 cup milk
- β2 teaspoons Jamaican jerk seasoning
- βto taste salt and pepper
- β2 sprigs fresh thyme
- β grated coconut flakes

Preheat oven to 400Β°F (200Β°C).

Pierce the sweet potatoes several times with a fork and bake for 45-50 minutes, or until tender.

While the sweet potatoes are baking, melt the butter in a saucepan over medium heat.

Add the flour and whisk to combine. Cook for 1-2 minutes, or until lightly golden.

Slowly pour in the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook for 2-3 minutes, or until thickened.

Remove the sweet potatoes from the oven and let cool slightly.

Spoon the sweet potato flesh into a baking dish and top with the cheese, jerk seasoning, thyme, and coconut flakes (if using).
