Vietnamese Tofu Skewers
A flavorful and refreshing summer dish, these skewers of marinated tofu are perfect for grilling and serving with a side of rice or noodles.
Ingredients
- β250g tofudrained and cut into 1-inch cubes
- β1/4 cup roasted peanutschopped
- β2 tablespoons intensely roasted coffeeground
- β10-12 skewerssoaked in water for 30 minutes
- β2 tablespoons fish sauceor to taste
- β2 tablespoons lime juicefreshly squeezed
- β1 tablespoon honeyor to taste
- β3 cloves garlicminced
- β1/4 cup cilantrochopped

Preheat grill to medium-high heat.

In a shallow dish, whisk together coffee, fish sauce, lime juice, and honey.

Add garlic and cilantro to the marinade and stir to combine.

Soak the skewers in water for at least 30 minutes.
