Savory Stew (Vegetarian)
A hearty, comforting stew made with a variety of vegetables and served with crusty bread.
Ingredients
- β2 medium Carrots
- β3 large Potatoes
- β1 large Onions
- β8 oz Mushrooms
- β1 cup frozen Peas
- β4 cups Vegetable broth
- β1 cup Red wine
- β2 tbsp Tomato paste
- β2 sprigs Thyme
- β2 sprigs Rosemary
Instructions

Heat oil in a large pot over medium heat.

Add onions and cook until softened, about 5 minutes.

Add mushrooms and cook until browned, about 5 minutes.

Add carrots and potatoes and cook for 5 minutes.

Pour in vegetable broth and red wine, scraping up any browned bits from the bottom of the pot.

Stir in tomato paste, thyme, and rosemary.

Bring to a boil, then reduce heat to low and simmer, covered, until the vegetables are tender, about 30 minutes.

Stir in frozen peas and cook until thawed.
