Lamb Skewers with Mediterranean Flair
A flavorful and colorful dish featuring tender lamb, marinated in a mix of herbs and spices, grilled to perfection on skewers.
Ingredients
- β1.5 pounds Lamb shoulder, cut into 1-inch cubesYou can use any cut of lamb, but shoulder works best for skewers
- β1/4 cup Smoky olive oilYou can also use regular olive oil if you don't have smoky olive oil
- β1/4 cup, crumbled Intensely flavored feta cheeseDon't skip this ingredient, as it adds a lot of flavor to the lamb
- β2 tablespoons, chopped Fresh oreganoYou can use dried oregano if you don't have fresh oregano
- β3 cloves, minced GarlicDon't overdo it with the garlic, as it can overpower the dish
- β2 tablespoons Lemon juiceFreshly squeezed lemon juice works best
- β1 teaspoon SaltUse kosher salt or sea salt for the best flavor
- β1/2 teaspoon Black pepperUse freshly ground black pepper for the best flavor
- β10-12 Wooden skewersMake sure to soak the skewers in water for at least 30 minutes before grilling

In a large bowl, whisk together the olive oil, feta cheese, oregano, garlic, lemon juice, salt, and black pepper.

Add the lamb cubes to the marinade and mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat the grill to medium-high heat.
