Smoky Norwegian Lamb Skewers
A flavorful and easy-to-make recipe featuring lamb skewers marinated in a smoky Norwegian-inspired mix of herbs and spices.
Ingredients
- ●500g lamb shoulder, cut into 1-inch cubes
- ●2 tbsp olive oil
- ●2 tsp smoked paprika
- ●1 tsp Norwegian-inspired spice mix (fennel seeds, coriander seeds, and a pinch of salt)Mix fennel seeds and coriander seeds

- ●1 tsp chopped fresh parsley

1. Preheat grill to medium-high heat (around 375°F/190°C).

2. In a medium bowl, whisk together olive oil, smoked paprika, Norwegian-inspired spice mix, garlic, lemon juice, and black pepper.

3. Add the lamb cubes to the marinade and mix until coated.

4. Thread the marinated lamb cubes onto skewers, leaving a small space between each piece.

5. Brush the grill grates with olive oil to prevent sticking.

6. Grill the skewers for 8-10 minutes per side, or until the lamb reaches an internal temperature of 145°F (63°C) for medium-rare.

7. If using, add the intensely smoky Norwegian wood chips to the grill during the last 5 minutes of cooking.
