Spicy Malaysian Tofu Curry
A spicy and aromatic Malaysian-inspired tofu curry dish that is easy to make and packed with flavor. Serve with steamed rice or noodles for a delicious and satisfying meal.
Ingredients
- β1 block (14 oz) tofu
- β2 tablespoons curry paste
- β2 tablespoons coconut oil
- β1 medium onions
- β3 cloves garlic
- β1-inch piece ginger
- β1 cup chicken broth
- β1 cup coconut milk
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β1-2 intensely spicy chili peppers
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1/2 teaspoon turmeric

Heat 1 tablespoon of coconut oil in a large pan over medium heat.

Add the onions and cook until they start to soften, about 5 minutes.

Add the garlic and ginger and cook for another minute.

Add the curry paste and cook for 1-2 minutes, stirring constantly.

Add the chicken broth, coconut milk, fish sauce, sugar, cumin, coriander, and turmeric. Stir well to combine.

Bring the mixture to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.

Add the tofu and cook for another 5-7 minutes, or until it is heated through.
