Sweet Eastern Chicken Curry
A delicious and flavorful curry dish made with tender chicken and a sweet eastern-inspired sauce.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 tablespoons coconut oilfor sautΓ©ing
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β2 teaspoons curry powdersweet and slightly spicy
- β2 tablespoons honeyfor sweetness
- β1 cup yogurtplain, for sauce
- β2 tablespoons lemon juicefreshly squeezed
- βto taste saltfor seasoning

1. Heat coconut oil in a large skillet over medium-high heat.

2. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.

3. In the same skillet, add chopped onion and cook until softened, about 3-4 minutes.

4. Add minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.

5. Stir in curry powder and cook for 1 minute, until fragrant.

6. Add honey, yogurt, and lemon juice to the skillet and stir until smooth.
