Tonkotsu Ramen
A rich and savory Japanese noodle soup dish, made with a pork tonkotsu broth and topped with various ingredients.
Ingredients
- β2 pounds Pork bonesYou can use pork neck bones or rib bones for this recipe.
- β4 cups Tonkotsu brothYou can use store-bought tonkotsu broth or make your own by simmering pork bones in water.
- β1 package Ramen noodlesYou can use fresh or dried ramen noodles for this recipe.
- β1/2 pound Sliced porkYou can use pork loin or pork belly for this recipe.
- β1 bunch Green onionsYou can use thinly sliced green onions for garnish.
- β1 tablespoon Sesame seedsYou can use sesame seeds for garnish.
- β2 tablespoons Soy sauceYou can use soy sauce for seasoning.
- β1 tablespoon Sesame oilYou can use sesame oil for seasoning.
- β1/2 teaspoon Ground white pepperYou can use ground white pepper for seasoning.
- β1 piece Pickled gingerYou can use pickled ginger for garnish.

1. In a large pot, combine pork bones and tonkotsu broth. Bring to a boil over high heat.

2. Reduce heat to low and simmer for 4-6 hours, or until the broth is rich and flavorful.

3. Cook ramen noodles according to package instructions. Drain and set aside.

4. Slice pork into thin strips. Season with soy sauce, sesame oil, and ground white pepper.

5. In a large bowl, combine cooked noodles, sliced pork, and green onions.

6. Ladle hot broth over the top of the noodles. Garnish with sesame seeds and pickled ginger.
