Spicy Turkish Pilaf
A flavorful and spicy Turkish-inspired pilaf made with mung beans and crispy vegetables.
Ingredients
- β1 cup, rinsed and drained Mung beans
- β1 cup Turkish pilaf mix
- β2 tablespoons Olive oil
- β1 medium Onion, finely chopped
- β1/4 cup, chopped Crisp sprout
- β1 clove Garlic, minced
- β1/4 teaspoon Dried red pepper flakes
- β1/4 teaspoon Salt
- β1/4 teaspoon Black pepper
- β1/4 cup Fresh parsley, chopped

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook, stirring occasionally, until softened, about 5 minutes.

Add the mung beans, pilaf mix, garlic, red pepper flakes, salt, and black pepper. Stir to combine.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the liquid is absorbed and the mung beans are tender.

Stir in the chopped sprout and cook for an additional 2-3 minutes.

Fluff the pilaf with a fork and garnish with chopped parsley.
